i didn't blog yesterday! i'm a horrible person!

so you get two today. yay you!

i'm going to give you one more autumn cookie recipe today. i need to start experimenting with some winter cookies soon because i went to get them up on etsy at the end of this month, so you'll probably be seeing some of those in the coming weeks, but for now, pumpkin chip cookies.

most pumpkin cookies come out very soft because of the pumpkin. they're cakey - more muffin than cookies. adding a little bit of oil helps with this although they're still very soft.

1 c. unbleached sugar
1 c. canned pumpkin
1/2 c. vegan shortening
1/4 c. vegetable oil
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground ginger
1/4 tsp. allspice
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 c. chocolate chips

preheat oven to 375. mix sugar, pumpkin, and shortening. mix in the rest of the stuff. drop by teaspoonfuls onto ungreased cookie sheet, and bake 8-10 minutes. let cool on the pan for 5 minutes. remove to a cooling rack to cool completely
